On the menu today: fried fish, shrimp, corn bread, banana fritters!

Hello my fellow foodie readers, on the menu today is fried fish, fried and mango lime butter sauteed shrimp, corn bread and banana fritters. I have recipes and video to share. Firstly I'd like to say sorry that my video isn't professionally done and it's short. So without further ado I present to you episode 1 of Shannon Pogue's what's on the menu today.


Fried Fish


Ingredients

  • 48 0z cooking oil
  • 1 box of Zataran's southern fish fry
  • 1 teaspoon Old Bay seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper   
  • 6-12 whiting fillets

season your fish with salt, pepper, old bay seasoning. then add your fish fry mix in a plastic zip loc bag or paper bag and add fish then shake until fully coated. heat your oil to medium high and wait for oil to get hot. when oil is hot fry 3 or 4 fish at a time for 4 minutes on each side or until crispy golden brown. 

Corn Bread

2 pkg of Jiffy corn muffin mix
1 cup self rising flour
3 eggs
2 cups of milk

follow directions on the jiffy box plus add 1 cup self rising flour. put mix in a 8x11 in greased pan. bake in a 350 degree oven for 35-40 min.

Mango Lime Butter Sauteed Shrimp

1 1/2 lbs. medium shrimp
1-2 tsp. Weber's mango lime seafood seasoning
1/2 stick of butter

in a skillet on medium high heat melt half a stick of butter then add seasoned raw shrimp. saute for about 8-10 minutes until pink and curled up. 

Fried Shrimp

1 1/2 lbs. medium shrimp
1/2 container of Old Bay shrimp batter
48 oz. cooking oil

Follow batter directions as directed on container in a medium sized bowl. dip shrimp in batter. Put shrimp in hot oil in skillet on medium high heat for 6-8 min. or ntil golden crispy brown.

Banana Fritters

3 large ripe bananas mashed
2 eggs
3 tbsp cooking oil
1 tsp vanilla extract
1/2 tsp nutmeg
1/2 tsp cinnamon
3 tbsp sugar
1 1/2 cups of all purpose flour
1/2 cup milk or water
48 oz cooking oil

combine bananas, eggs, oil, milk and/or water in a medium mixing bowl and mix. then add in sugar, nutmeg, cinnamon, vanilla. lastly incorporate the flour and mix well. then in a frying pan heat up your cooking oil on medium high heat. spoon drop the fritter batter one by one about 8 -10 per batch. fry on each side for 2 min. or until golden brown. drain on a paper toweled plate and serve.
