Cassava Pone (recipe) | TriniGourmet.com and an Island novella!

Hello my fellow foodie readers, welcome to wala wala bing bong island and on the menu today is a lovely island story by me of course and a wonderful treat from the isle of Trinidad brought to you by TriniGourmet called Cassava Pone. Sit back and have a Trinidadian rum punch and relax!

The Haunting of Alimina


One day Sally Sandyfeet aka lil' Sandrina the rap star, decided she was tired of touring all over the world rapping and not enjoying the many wonderful places she visits. So she told her manager Manny "the Star-maker" Michaels that she wanted him to book her on a Caribbean cruise. Being a money hording penny pincher Manny books her a 5th class cruise on the Alimina Sea witch cruise line. When Sally takes a look at Alimina she cringes and says to Manny "you had to be a cheapskate?" Manny just smiled and gave her a shrug. "whatever'' Sally sighs "let's just go before I change my mind". So off they went to the island of Wala Wala Bing Bong. Sally sitting in her stateroom tries to unwind and take a nap. It didn't take long with the boat rocking gently in the sea made Sally fall fast asleep. Sally started dreaming about making a palm tree hammock, sipping on rum punch and enjoying the local seafood delicacies. She could almost smell and taste the islands fresh coconut water drinks in her hand. When all of a sudden Sally woke up because of a strange noise. She got up and followed that noise to a small closet not to far from the engine room. Wondering if she should have woken up Manny before setting off on a cruise crusade. "oh well", Sally says as she opens the closet door. Out bursts what appeared to be a cloud of smoke, but instead was a ghost. Stricken with fear Sally stares at the ghost in shock. The ghost says to Sally," I'm Alimina the life of this boat, answer my question and I'll let you go, Find out who took my life away, and I'll reward you greatly, but solve not my question and I'll keep you here, for eternity you and I will be my dear". Sally shook her head in disbelief but obliged the ghost's riddle. "sheesh she could've given me a clue". Before Sally knew it she was in her room in her bed feeling woosey. Sally fell fast asleep again, but instead of having her perfect island vacation dream, she was taken back to 1925 and there she saw Alimina alive! Alimina was sitting in the piano room with a few men singing, when a busboy came over to her with a letter. The letter said meet me in the closet  by the engine room, I have a surprise for you. All the men  looked at Alimina, the captains daughter run off in a hurry. Alimina waited patiently, then hours passed and nobody showed but the busboy again, handing her another note saying Sorry my dear Alimina I couldn't show because your father has me working round the clock without a break, but I did manage to get the busboy to leave your surprise in the closet. Alimina opened the closet to see a little wooden box and in it was a note, a ring, and some cassava pone, Alimina's favorite Island dessert.The note read my dear Alimina I would like to ask your father for your hand in marriage when we dock on Wala Wala Bing Bong Island what say you? Tears welled up in Alimina's eyes and she was about take a bite of cassava pone when she hear a clicking sound. "someone has locked me in the closet". Alimina yelled and banged on the closet door for hours and nobody could hear her because she was so close to the engine room. Alimina cried "isn't there someone out there that can hear me?". No one ever found her and she died in that closet, her body never to be found by her family or her beloved, until 40 years later in the mid 60's when some rich guy bought the boat in plans to making a bigger fortune in the sea faring industry. To his surprise his business went bust because Alimina haunted it and his passengers kept disappearing. Becoming a slave to Alimina he had to keep changing the boats name to get customers to help Alimina solve her death. To no avail her death has never been solved. No one would agree to help her or had enough insight on how to solve it, despite the clues she gave. When came time to wake up Sally and ask her that final question, Sally asked her a question before she went and answered her. "Ok Alimina if I tell you what happened to you and you don't like the answer will you still let me and Manny go? She answered "I will let you go but as for your friend Manny there is no hope he refused to help me and he resides with me forever". "ok, well here it goes, Alimina...... "yes" Alimina said with anticipation in her voice. " Alimina, your father killed you and your beloved! Alimina screamed "NOOOOOOOOOOO!!!!" "How do you know this!" "I saw him lock you in the closet and send all his crewmen on deck on a wild goose chase and when your beloved was alone, he bopped him on the head with a candelabra and threw him off the boat." "Oh father how could you?" Just then the ghost of her father came in and said "Alimina, I'm so sorry, I've been waiting a long time for someone to solve your murder, I've been in limbo because after what I've done to you I took my own life so no one ever found you." "But why father, why?" "Because I didn't want my little girl marrying a dirty sea dog like Henry!" "I'd rather you'd be dead". Alimina chased her father back to limbo and set all the tortured souls free including Manny's. When the boat docked at the island of Wala Wala Bing Bong, out exited so many people Sally and Manny's eyes couldn't believe it. They both looked at each other then Sally said I'm booking us a flight back home. Manny shook his head in agreement. Sally and Manny set off to have some island fun and made a decision to change their careers as actors, to tell the tale of the haunting of Alimina, because who would believe them if they just told this story to the press without them saying it was an idea for a new blockbuster film?

On the menu today: fried fish, shrimp, corn bread, banana fritters!

Hello my fellow foodie readers, on the menu today is fried fish, fried and mango lime butter sauteed shrimp, corn bread and banana fritters. I have recipes and video to share. Firstly I'd like to say sorry that my video isn't professionally done and it's short. So without further ado I present to you episode 1 of Shannon Pogue's what's on the menu today.


Fried Fish


Ingredients

  • 48 0z cooking oil
  • 1 box of Zataran's southern fish fry
  • 1 teaspoon Old Bay seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper   
  • 6-12 whiting fillets

season your fish with salt, pepper, old bay seasoning. then add your fish fry mix in a plastic zip loc bag or paper bag and add fish then shake until fully coated. heat your oil to medium high and wait for oil to get hot. when oil is hot fry 3 or 4 fish at a time for 4 minutes on each side or until crispy golden brown. 

Corn Bread

2 pkg of Jiffy corn muffin mix
1 cup self rising flour
3 eggs
2 cups of milk

follow directions on the jiffy box plus add 1 cup self rising flour. put mix in a 8x11 in greased pan. bake in a 350 degree oven for 35-40 min.

Mango Lime Butter Sauteed Shrimp

1 1/2 lbs. medium shrimp
1-2 tsp. Weber's mango lime seafood seasoning
1/2 stick of butter

in a skillet on medium high heat melt half a stick of butter then add seasoned raw shrimp. saute for about 8-10 minutes until pink and curled up. 

Fried Shrimp

1 1/2 lbs. medium shrimp
1/2 container of Old Bay shrimp batter
48 oz. cooking oil

Follow batter directions as directed on container in a medium sized bowl. dip shrimp in batter. Put shrimp in hot oil in skillet on medium high heat for 6-8 min. or ntil golden crispy brown.

Banana Fritters

3 large ripe bananas mashed
2 eggs
3 tbsp cooking oil
1 tsp vanilla extract
1/2 tsp nutmeg
1/2 tsp cinnamon
3 tbsp sugar
1 1/2 cups of all purpose flour
1/2 cup milk or water
48 oz cooking oil

combine bananas, eggs, oil, milk and/or water in a medium mixing bowl and mix. then add in sugar, nutmeg, cinnamon, vanilla. lastly incorporate the flour and mix well. then in a frying pan heat up your cooking oil on medium high heat. spoon drop the fritter batter one by one about 8 -10 per batch. fry on each side for 2 min. or until golden brown. drain on a paper toweled plate and serve.

Peanut Butter Cheese Cake Minis Novella

Hello my fellow readers, today on the Shannon Pogue Eats Novella: Patty the peanut butter lover has cheese cake disorder. Will she overcome her disorder? Will she give in to temptation? Will she need to go to cheesecake rehab? Let's find out.........

Patty Peabody aka the Peanut butter lover was sitting at home on her couch watching the food network, when suddenly she saw Paula Deen making her famous Peanut butter cheese cake minis. Like a lightning bolt hit she says to herself "hmmm Peanut butter and cheesecake? I've never tried that before". Before she knew it she went online to pull up the recipe and she started making the peanut butter cheese cake minis. Her sister Penelope Peabody aka Princess Peach says to her sister "ooh whatcha making?" Startled by her sisters presence she sighs and begrudgingly says "I'm making a dessert". "I see that Patty, but what kind of dessert?". "Don't worry about it, just know it's a dessert"! Patty said in a cold manner that made Penelope shiver.

(See Patty and Penelope have a dessert making sibling rivalry that makes Harry Potter and Lord Voldemort look like ol' pals. now back to the story)

Penelope stormed out of the kitchen and went for a walk to the local bakery to get her own dessert. Meanwhile, Patty finishes the final decor touches on her peanut butter cheesecake minis and realizes she made so many she could start her own bakery. Looking at her 100 peanut butter cheese cake minis in adoration she takes a picture of them then commences to devour them when out of no where Penelope burst in showing off her decadent black forest cheesecake minis from Baker's Ma'am Bakery. When she realized that her sister Patty made so many Peanut butter cheesecake minis that envy tore through her like a rapier sword. "Wow you have so many of them surely you must share with me, I'll share mine with you", Penelope exclaimed.

"It's mine, my precious peanut butter cheesecake minis!" Patty hissed (like some kind of dessert possessed hobbit) "I won't share make your own!" "Gosh not even one little bitty piece? how about a bite?" Penelope cried as she picked one up from the kitchen counter. Patty stabs her sister in the hand with a fork. "OOOWWWW!!!!! cried Penelope and then an epic battle ensued with peanut butter minis flying all over the place, blood sweat and tears strewn all over the kitchen, screaming, kicking and crying echoes in the kitchen when in burst Paul Peabody the brother aka Pizza Paul. "what kind of malarkey is going on in this kitchen!" Paul shouted getting the attention of his battered, bloody, batty sisters. They both looked up, Penelope cried and looked away in shame. While Patty still looking deranged and only saying "My peanut butter cheesecake minis, mine!".

Paul and Penelope leave the kitchen to discuss how they're gonna handle Patty and her cheesecake conundrum. Both Paul and Penelope decided to call the cheesecake rehab hotline. After carefully explaining what happened within 15 minutes, two guys in white enter the Peabody kitchen to wrap up and take away a ms. Patty Peabody. Kicking and screaming Patty refused to take any treatments at the cheesecake rehab center. Little did the rehab center know that Patty is a master of concealment, she sneaked in 25 peanut butter cheesecake minis. Devouring them in less than 5 minutes, she suddenly collapses going into a sugar comma. The center alerted her family. "The doctor says she may not make it Paul cried to Penelope. Penelope looking down over Patty's body cries "what should we do?" " I think we should pull the plug I don't think Patty would want to suffer". "Oh Paul" Penelope cries as she buries her face in Paul's shirt. "Alright I guess, you know best".

Patty Looking outside of her body and hearing her siblings plans starts to cry on the inside, "why didn't I just share!?". The doctor comes in and notes the family request turns to Paul and Penelope and says "Have you any final words before I pull the plug?". "No" they said in unison. Patty still kicking, screaming and crying on the inside, sheds a single tear on the outside and it was lights out.

Patty Peabody jumps up off the sofa in a cold sweat, realizing she was still alive says to herself "whew it was only a dream", "Hmmm I gotta find that recipe for Peanut butter cheesecake minis".

Capri Sun Fruit Punch Pops Recipe - KitchenDaily

I remember when my four year old Logan came to me when he was 2 trying to open a Capri Sun juice pack. After a fierce battle and much understood argument with the juice pack, with tears in his eyes and a crackle in his voice he said "mommy I not open it". His little cave man saying almost made me cry. So I put an endearing I'm so sorry face and told him let me help you. As soon as I punctured the pouch with the straw he snatches the juice pouch and it gushes out all over his little face and shirt. Of course he does what any normal 2 year old would do, he threw the pouch on the floor stomped and had a tantrum fit. Well after cleaning him up and emptying another Capri Sun pouch this time in a cup and gave it to him, Logan was so happy he did his little happy song and dance, but being careful not to spill his juice this time. When it was hot mainly in the summer I would make my kids ice cube tray juice pops. However not until now have I tried making them with Capri Sun juice and fruit so when I found this recipe on Kitchen Daily my face lit up like the fourth of July and my kids started doing the happy dance and cheering Yay mommy's gonna make it! So I'd like for you my fellow readers to enjoy this treat this summer and do a little song and dance to bring out the kid in you. Southwestern Potato Salad

Those whose preferences lean toward the spicy will love this salad. Adjust the heat by increasing or decreasing the amount of jalapeño and chipotle chile.
1 (7-ounce) can chipotle chiles in adobo sauce
2 pounds small red potatoes
Cooking spray
1 1/2 cups fresh corn kernels (about 3 ears)
1/2 cup chopped celery
1/2 cup finely chopped red onion
1/2 cup chopped red bell pepper
1/4 cup chopped fresh cilantro
1 (15-ounce) can black beans, rinsed and drained
1 jalapeño pepper, seeded and finely chopped
1/4 cup fresh lime juice
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Remove 1 chipotle chile from can. Chop chile to measure 2 teaspoons. Reserve remaining chiles and adobo sauce for another use. Place potatoes in a saucepan, and cover with water. Bring to a boil. Reduce heat; simmer 10 minutes or until tender. Drain; cool. Cut potatoes into 1/4-inch cubes. Place potatoes in a large bowl.
Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add corn; sauté 5 minutes or until lightly browned. Add corn, celery, and next 5 ingredients (celery through jalapeño) to potatoes; toss gently.
Combine 2 teaspoons chopped chipotle chile, lime juice, salt, and black pepper, stirring with a whisk. Drizzle the lime juice mixture over potato mixture, and toss gently. Cover and chill 1 to 24 hours.
[NOTE: This came out a little dry for me. I suggest adding more lime juice or other liquid or just increasing the amount of the dressing if it seems dry. -SV]

How to quickly clean your kitchen in no time Safely and Green!

Hello my fellow readers! Todays topic is how to quickly clean your kitchen in no time safely and green! Okay first things first take a look at your kitchen and make a mental mapping plan of what's easiest to clean to what's hardest. After you've made your mental map plan take on the hardest part or parts first leaving the easiest for last. Say for instance if the dishes are your most time consuming or better yet cleaning out your fridge or cabinets. Break down that task into small parts for example: Fridge Cleaning: throw away all the yucky and expired stuff, then neatly place the good foods on the table in the order in which you want to re-shelve them, then spray and wipe your fridge with one part hydrogen peroxide and one part water in a matte colored spray bottle. Note: do not use a clear spray bottle because it damages the effectiveness of the peroxide. Then re-shelve your things and viola! next task.

But for those of you who would like to make your own green cleaning products here are some kitchen cleaning recipes:

Homemade multi use cleaner
1 cup white vinegar
1 cup water
spray bottle


In the kitchen, use vinegar-and-water spray to clean countertops, lightly soiled range surfaces and backsplash areas. 
In the bathroom, use vinegar spray cleaner to clean countertops, floors, and exterior surfaces of the toilet. 
Green house sanitizer spray
1 cup Hydrogen Peroxide 
1cup water
1 Matte white colored or dark colored spray bottle (not clear)
Use any where you would need to disinfect something like after handling bloody meat or fish in the kitchen, to behind a toilet seat in the bathroom etc.

Welcome !

Hello my fellow readers this is Shannon Pogue of Shannon Pogue Eats and I'd like to introduce myself. I decided to embark on a culinary journey by food blogging, vlogging and writing all things food and food related. I'm a happily married mom of 8. I've been in the culinary field for about 5 years but I've been a cook for 25 years. I have had a lot of turmoil deciding on what to do with my life career wise and after much struggle and research I decided " do what you love duh!" So now I'm doing it. In the upcoming events I will be writing and video taping all things food. From how to's, recipes, wine pairings, cooking tests, reviews you name I'll do it (food stuff) ;) so without further ado let's begin!
